Cá rửa sạch với nước muối pha loãng, để cá vào rổ thưa, dùng tay chà nhẹ để phần nhớt của cá ra bớt, rửa lại cho thật sạch, ướp vào cá 1 muỗng cà phê muối, để khoảng 15 phút.
Gừng cạo vỏ, tỏi và hành tím bóc vỏ, hành lá lấy phần đầu hành rửa sạch, đập dập. Ớt trái rửa sạch.
Lấy một phần gừng cắt sợi lót dưới đáy nồi để kho cá. Phần gừng còn lại giã nhuyễn với ớt, tỏi, hành tím.
Xếp cá vào nồi, bên trên cho nước màu, dầu ăn và phần tỏi, ớt, hành tím, gừng đã giã, đầu hành và 3 muỗng canh nước mắm, 2 muỗng canh đường, 1 muỗng cà phê muối và thêm một ít ớt bột. Ướp khoảng 30 phút sau đó cho nồi lên bếp đun sôi lửa bùng thì tiếp tục đun lửa nhỏ để cá thấm gia vị.
Thỉnh thoảng cầm tay cầm của nồi lắc đều và khi đun không đậy kín nắp nồi. Đun từ 30 - 40 phút, nêm nếm lại tùy theo khẩu vị, tắt bếp rắc hành lá và một ít tiêu lên bề mặt.
Múc ra đĩa làm món mặn ăn với cơm. Món ăn sẽ đưa cơm nhà bạn lắm đấy!
