Mực tẩm bột chiên xù đơn giản với những miếng mực tươi rói, được nhúng qua một lớp bột ướt, sau đó áo qua bột chiên xù. Không cần tẩm ướp gia vị gì. Đem chiên giòn lên là được.
Cho bột chiên giòn vào thố lớn, đổ 120ml sữa tươi không đường vào, thêm 1 quả trứng, dùng phới lồng đánh tan đều. Trong đĩa nhỏ, trộn đều bột chiên xù với bột ngò. Mực làm sạch, rửa sạch, thấm khô nước rồi cắt khoanh nhỏ.
Nhúng mực đã cắt vào hỗn hợp bột ướt, sau đó lăn qua đĩa bột chiên xù cho áo đều.
Đun nóng nhiều dầu ăn trong chảo sâu lòng, cho mực đã tẩm bột vào chiên chín giòn, vàng cam thì vớt ra để ráo dầu.
