Tôm bóc vỏ, bỏ chỉ đen, giữ lại phần đuôi cho đẹp mắt. Chanh cắt ngang thành những lát dày khoảng 3-5mm. Xiên xen kẽ tôm và chanh vào que xiên. Ướp các que xiên tôm chanh với 1/2 muỗng canh dầu ô liu, 1/2 muỗng cà phê muối, 1/2 muỗng cà phê tiêu trong khoảng 5-10 phút. Sau đó xếp các xiên tôm ra khay nướng có lót sẵn giấy bạc, nướng ở 205 độ C cho đến khi tôm chuyển màu hồng và co lại là được.
Cho vào máy xay 1/2 trái bơ, lá húng quế, 1 muỗng canh nước cốt chanh, 2 muỗng canh dầu ô liu (cho thêm 1/8 muỗng cà phê muối, 1/8 muỗng cà phê tiêu tùy thích) xay nhuyễn mịn.
